Nikki and Paige’s 7 veg/7 can Chili

Takes a while to prep – can chop/cook veggies in advance.



  • Celery
  • Carrots
  • Onion
  • Mushrooms
  • Green pepper (red pepper optional)
  • Zucchini
  • Squash


  • corn
  • diced tomatoes x 2
  • beans x 4 (we usually use black, kidney, etc.)


  • Salt & pepper
  • Garlic
  • Cayenne pepper, cumin, chili powder
  • Olive oil
  • Can of beer (whatever is in the fridge)


  • Tortilla chips, sour cream, shredded cheddar

Cooking instructions

  1. Chop all veggies
  2. Start with celery, carrots and onions – sautee in olive oil with salt and pepper
  3. add mushrooms, zucchini, squash (and possibly more olive oil, salt and pepper), and a few cloves of garlic (pressed or chopped) – sautee until all veggies cooked but not too mushy
  4. dump in pot with content of cans, beer and lots and lots of cayenne pepper, chili powder, cumin (taste test to be sure). NOTE: don’t strain tomatoes, straining beans optional
  5. cook on medium high heat for 45 mins-1 hour while chili thickens
  6. top with cheddar, sour cream and serve with tortilla chips
